GENERAL SUMMARY
Under general supervision of the Director of Dining Services and Dining Services Supervisor, prepares food with the assistance of Dining Services Aides.
PRINCIPAL DUTIES AND RESPONSIBILITIES
Confers with Director of Dining Services and/or Dining Services Supervisors about the preparation of food for meals and assists in estimating quantities needed.
- Prepares foods listed on menus using safe food handling methods. Responsible for taste and quality of finished product.
- Assures that food is served at the proper time and correct temperature.
- Makes advance preparation for the next day as directed by Dining Services Supervisor and/or Director of Dining Services.
- Assists in the training of new employees.
- May supervise and be responsible for the general operation of the kitchen and work of Dining Services Aides in the absence of a Dining Services Supervisor or Director of Dining Services.
- Keeps records of daily food usage and notifies supervisor of supply needs when appropriate.
- Cleans own work area. Performs other cleaning duties as scheduled.
- Serves meals in dining room and kitchen as assigned. Will assist with meal service as needed.
- Records food temperatures prior to meal service. Takes corrective action for temperatures in the “Danger Zone” and notifies supervisor.
- Miscellaneous duties as assigned.
The primary purpose of the job description is to aid in establishing a pay grade for this job classification. KNOWLEDGE, SKILLS AND ABILITIES
- Knowledge and skills typically acquired through a high school degree.
- Thorough knowledge of and skill in the application of quantity food preparation and techniques and practice. Experience in quantity cooking in a health care facility.
- Thorough knowledge of kitchen sanitation, personal hygiene, food handling and storage practices.
- Safe serve certification required, post hire.
- Knowledge of therapeutic diets.
Physical ability to:
- Operate large scale mechanical food preparation equipment
- Lift up to 75 lbs.
- Push/pull wheeled carts weighing up to 300 lbs.
