JOB SUMMARY:
The
prep cook is responsible for assisting in preparing, working with and
delivering food according to the nutritional needs of the resident while
maintaining high standards of quality, sanitation and safety.
KNOWLEDGE, SKILLS, AND ABILITIES:
Education: High school diploma or GED
Experience: Previous
customer service and dining service experience preferred Licensure: n/a
Skills: Must
be able to communicate in English both verbally and in writing.
Must be team oriented; possess basic math and organizational skills and possess the ability to work independently and
calmly under pressure
PHYSICAL AND COGNITIVE REQUIREMENTS:
Ability
to lift, push and move equipment, supplies, etc., up to fifty pounds. Ability to use all equipment listed which
includes pushing switches, buttons, etc.
Ability to measure quantities of foods and liquids. Must be able to move about in tight
spaces. Constant standing and walking is
required. Frequent bending, lifting, squatting, kneeling also required. Climbs
a three foot and/or six foot step ladder.
Ability to focus and read resident menus, labels, signs, and to
distinguish between different types of food and beverages. Ability to focus and read labels,
thermometers and gauges. Must have the
ability to receive verbal instructions and converse with co-workers, residents
and visitors. Must be able to respond to audible emergency signals, alarms and
to answer a caller on the phone. Must be able to work on repetitive tasks and
concentrate on moderate details with frequent interruptions. Must be able to attend to tasks lasting from
10-120 minutes. Must be able to remember
multiple tasks and assignments over the course of a shift.
ENVIRONMENT AND WORKING CONDITIONS:
Works in
clean, well-light, well-ventilated kitchen and dish room.
Will frequently use the following equipment: Stove, oven, can opener, griddle, toaster, mixer, blender,
knives, forks, spoons, serving utensils, food carts, trays, hot boxes, steam
tables, dish machine, freezer, refrigerator, pots and pans, switches and water
faucets.
Must be able
to withstand heat while working around stoves, ovens and changes in
temperatures when going in and out of refrigerated areas.
Exposure to blood, body tissue, and other infectious fluids.
Exposure to agitated or hostile residents, family members or
visitors. Occasional exposure to injuries due to unpredictable behaviors of
residents.
Exposure to cleaning chemicals, detergents, etc.
Subject to falls, cuts and burns from equipment, odors, etc.
throughout the workday.
May preform some duties outside in various weather
conditions.
Works beyond
normal duty hours, and in other positions when necessary.
May be exposed to high humidity in the building throughout
the summer months.
Is subject to frequent interruptions.
Works
with residents, staff, visitors, government agencies, etc., under all
conditions and circumstances.
JOB DUTIES & RESPONSIBILTIES:

Assists cooks withthe preparation of appealing, nutritious foo d in accor d ance with state, fe d eral an d local regulations, an d facility stan d ar d sfor resi d ents, employees an d visitors.
- Ensures proper sanitation and
storage of kitchen equipment, food and supplies.
- Ensures that food temperatures are
maintained at proper levels throughout service, and storage.
- Understands modified diets and is a
team player in working toward resident's nutritional wellbeing.
- Assists in control of inventory and
supplies. May fill kitchen stock orders as needed.
- Responsible for sanitation of
kitchen work areas; will keep them clean, dry and free of hazardous
equipment, supplies, etc.
- Performs dishwashing and cleaning
procedures as needed.
- Documents food, refrigerator,
freezer temperatures.
conditions/equipment to supervisor/maintenance immediately.
- Use detergents, antimicrobials,
bleach and any other chemicals according to directions. Is aware of Safety
Data Sheet (SDS) for all chemicals.
Follows written and oral instructions on proper chemical use.
- Protects organization's value by keeping
resident's personal health information confidential per HIPAA guidelines.
- Adheres to facility's safety and infection
control policies. Participates in and completes all mandatory in-services and
educational opportunities as directed.
- Performs other duties as assigned.
