MSS Completion- should be 100% each week. When it is not please present to me the exceptions log and what date it was rescheduled to.
Pre-Op NRs- with some clarification from Damien, anything that is PSSI related that causes a pre-op NR.
BRC - pass the sanitation portion, including all documents and training. You should have 100% access to these at all times and should set up an audit frequency. Let me know how often you decide to audit so I can write it down and then a small email/report of what your findings were from auditing the documents.
Safety-MEP Grade - all of your safety paperwork, I can't define this one further but in case we need to review it, we can get with safety.
Department Costs - costs associate with your purchases need to be within reason and budgeted for. We did not budget for the listeria swabs we are about to receive but that should all break even because we are not purchasing as many ATP swabs. Just keep track of the dates you receive what. Do you have an order list for chemicals with costs and everything broke down?
Pre-Op Micro Follow Up - any FSNS result that is greater than 1,000cfus must be documented and a written corrective actions or preventative measure given. You need to receive a copy of these almost immediately. I would say within 48 hours. Make sure you initial them and keep a copy in a file folder. Also, any area that is listed in the pre-op deficiencies as build up/residue are to be followed up on the next production day.
