Summary
Preparation, set-up, and production of all salad menu items for consumption in accordance with club recipes and standards while maintaining a neat, clean, and safe work area at all times by performing the following duties.
Supervisory Responsibilities:
None
Essential Duties and Responsibilities include the following. Other miscellaneous job-related duties may be assigned.
- Prepares food items according to BFG&CC recipes.
- Possess strong knife handling skills.
- Identifies and prepares salad menu items to include, but not limited to, cuts of meat, poultry, shellfish, fish, game, cereals, grains, tubers, fruits, and vegetables for cooking.
- Prepares sauces, salad dressings, cold sauces, dips, and garnishments.
- Prepares foods by methods of frying, sautéing, broiling, roasting, braising, poaching, steaming, baking, stir-frying, simmering, boiling, and other means.
- Sets up, maintains, and breaks down salad cook stations.
- Responsible in maintaining all standards regarding sanitation, uniforms, food preparation, and storage.
- Responsible for all equipment cleaning and proper food storage.
- Responsible for putting away all stock items in the walk-in cooler and dry storage.
- Must label, date, and rotate all consumable products.
- Notifies Executive Chef of any expected shortages and/or malfunctioning equipment.
- Observes safety and security procedures; reports potentially unsafe conditions ; uses equipment and materials properly.

- Basic understanding of professional cooking and knife handling skills
- Understanding and knowledge of safety, sanitation, and food handling procedures
- Good listening, comprehension, and communication skills
- Contributes to building a positive team spirit.
