Performs the full range of kitchen related responsibilities in a healthcare setting including but not limited to:
- Maintains a clean and safe work environment
- Follows all health and safety policies, procedures and guidelines.
- Applies knowledge to prepare food for facility residents, patients, employees and visitors.
- Responsible for adhering to production schedules to minimize leftovers and eliminate waste.
- Prepares food according to principles, concepts and practices of food preparation including the use of production sheets, standardized recipes and HACCP logs. Also prepares food for cafeteria and special functions.
- Performs the preparation of food items including but not limited to washing, trimming, portioning, panning and seasoning.
- Follows written and oral instructions specifying the type and quantity of food to be prepared and the size of portions for residents/patients (regular and special diets).
- Inspects and tastes all products for correct seasonings, quality, appearance and temperature.
- Utilize progressive cooking methods to complete food preparation in a timely manner.
- Procures daily food ingredients and supplies from refrigerators, freezers and other storage areas.
- Ensures that the preparation area has the proper supply of ingredients and food items to ensure uninterrupted and efficient production.
- Returns any unused food items to designated storage areas, properly storing, labeling, dating, and rotating stock to prevent spillage and waste. Informs supervisor on duty of any availability problems or unusual activity.
- Operates a variety of manual and automatic commercial kitchen tools and equipment.
- Assembles resident/patient food trays as part of an assembly line. Sets- up and serve food to facility personnel, visitors and guest.
- Maintain storerooms, freezers, refrigerators, assigned work areas and equipment in a clean and orderly fashion.
- Performs tasks such as stocking shelves and rotating stock using the first in, first out method.
