Primary Task

The primary function of this position is to set-up, fill, monitor and cook all varieties of corn in the Corn Cooker to make masa for the tortilla chip production process, in a timely manner, observing all safety regulations, ensuring all GMP and quality standards are met and to maintain the efficient flow of product through the production process.

Essential Functions

• Put on all required Personal Protective Equipment and Safety Gear and insure that all safety devices are functioning properly.
• Ensure that proper supplies are positioned to assigned workstation, and if not communicate with other personnel to ensure that all necessary supplies and materials are positioned to the work station.
• Check paperwork and schedule for assigned cook tank and what type of corn product to cook, perform pre-production check to ensure cooker is functioning properly.
• Open valves to add water to fill tank and measure out lime and add to tank, open appropriate gas valves on cook tank and light the burners and monitor / check the temperature of the water as required.
• Manually position corn chute to appropriate cook tank and operate chute to pull corn kernels from a silo and fill the cook tank.
• Manually level corn evenly in the tank with a raking tool.
• As required, obtain full pallets of bags of corn with Hi-Lo / Power Jack and position pallet to cook tank.
• Manually open and dump bags of corn into tank and manually level corn evenly in the tank with a raking tool.
• Mix in other ingredients as required by the recipe / formula and cook the corn to the proper temperature, monitoring the process and stirring (flipping) corn kernels periodically throughout the process.
• Drain hot water from tank when batch is complete and add cold water to shock cooked corn.
• Set up pump to transfer the corn batch to the grinding machine as required.
• Make minor corrections and adjustments to process as needed, communicate and assist other production personnel as required.
• Keep work area and storage areas clear, clean and organized and place trash / non-conforming product in proper receptacles.
• Complete other related duties as assigned or directed by the Supervisor, at end of shift, perform general housekeeping as required.

• Must meet the company performance standards for the job.
• Must participate in company orientation and training.
• Must submit to background check, mandatory drug testing and not possess any significant criminal record as determined by the appropriate authorities.
• Must be able to work the scheduled / assigned times and required overtime for the position.
• Must be able to perform all job functions safely.
• Must ensure all GMP, SQF and quality standards are met.

Specific Job Skills and Qualifications

• Must have 1-2 yrs. Experience in food processing / mixer / operator
• Must be able to perform basic math / calculations.
• Must be able to stand and walk for extended period.
• Must complete “Power Jack” Training.
• Must complete “Lock-out / Tag-out” awareness training.
• Must know MSDS information regarding all materials used within the scope of the work.
• Must complete company “Cross Training” (observation, relevant testing, E-stop protocols) as required.
• Must be able to work as a team and follow instructions.
• Must have the ability to respond to inquiries, communicate and work effectively with co-workers under any conditions.
• Must have basic knowledge of how to use natural gas using caution around natural gas and flames.
• Must be able to use torch when lighting tanks.
• Must use compactor.
• Must use proper utility knives in a safe manner.
• Must use caution when stirring (Water will be extremely HOT).
• Must use proper lifting techniques and use caution when moving tanks.
• Must have basic knowledge of how to use weights, scales, take measurements and use thermometer.

HOURS & WORKDAYS:

Sunday through Thursday 10-hour days. When business requires, overtime on Friday and Saturdays will be mandatory.
