POSITION SUMMARY:
Responsible for compliance with all aspects of the Nutrition Services Department including code compliance, sanitation and infection control, meal preparation and service, dining experience, purchasing systems, budgetary performance, and resident's nutritional status. Evaluates and directs plans for improvement in each aspect. Assists in planning, organizing and enforcing systems to meet Extendicare's standards. Follows all Extendicare policies and procedures.
REPORTING RELATIONSHIPS:
Oversees the Clinical Nutrition Coordinator(s).
ESSENTIAL FUNCTIONS:
1. Evaluation and Direction
* Visits assigned health centers to assure compliance with code requirements and Extendicare standards.
* Makes rounds to evaluate the department sanitation and assure compliance with systems, policies and procedures.
* Observes meal service to assure accuracy and compliance with quality food service, planned menu and dining experience.
* Completes an Extendicare QVs/Audits per policy, evaluating the department for code compliance; sanitation and infection control; meal preparation and service; and purchasing systems.
* Reviews the Checklist/Audits with the Administrator and Nutrition Service/Culinary Service Manager.
* Monitors the overall operation of the department including productivity, staffing patterns, and cost containment as it relates to resident nutrition.
* Discusses Quality Validation Reviews and state surveys with the Nutrition Service/Culinary Service Manager and evaluates corrective action taken.
* Ensures OSHA compliance in Nutrition Services area.
2. Nutritional Care
* Completes nutritional assessments on all residents within time frames set by state regulations and Extendicare standards and procedures.
* Makes recommendations to Nursing Services, Nutrition Services and physicians on residents' nutritional care and Extendicare standards and procedures.
* Monitors and evaluates residents at nutritional risk.
* Reviews and approves Diet Extended Menus (regular and therapeutic menus).
* Attends resident Care Planning meetings as requested.
3. Planning and organizing.
* Assists in problem identification and implementation of solutions.
* Assists in developing and implementing efficient procedures and systems.
* Assists in determining equipment, staffing and budgetary needs of the department.
* Assists in adherence to state and federal regulations and Extendicare's standards and procedures.
* Attends department head meetings as requested.
4. Education Services
* Provides in-services to Nutrition Services and other staff as required by state regulations as needed.
* Serves as a preceptor for those employees involved in a Dietary Manager's course.
* Trains and/or assists in training new Nutrition Services/Culinary Services Manager and Clinical Nutrition Coordinator.
5. Participates in Performance Improvement teams as requested.
6. Follows health center dress and personal hygiene policies.
7. Complies with laws and regulations applicable to position and acts in accordance with Extendicare's Corporate Compliance Program.
8. Treats all residents, visitors, and staff with courtesy.
9. Works overtime, holiday and weekend hours as scheduled.
10. Assists in orientation and training of employees as assigned.
11. Keeps the administrator informed of Departmental matters.
12. Safety:
* Knows and follows health center rules.
* Demonstrates proper use of equipment. Reports equipment needs or repairs.
* Follows health center-smoking policies.
* Reports any incidents or accidents of residents, staff or visitors to the appropriate health center personnel.
* Performs duties, which may include transportation of residents, as assigned in Health Center Disaster Plan.
* Assists in scheduled cleaning duties, in accordance with established standards and procedures.
* Assists in maintaining all work/storage areas in a clean and properly arranged manner at all times. Signs off on cleaning schedule.
* Utilizes and cleans equipment correctly and safely.
* Properly disposes of kitchen waste.
13. Resident Rights:
* Knows Resident Rights. Helps the residents/patients exercise and/or protect their rights.
* Reports resident/patient complaints to management.
* Maintains confidentiality of resident/patient information.
